Satay sauce has roots in many cuisines. It’s an incredibly versatile and popular condiment made from a few key ingredients. Nailing this recipe will have you throwing out the jar sauces and patting yourself on the back. Homemade satay sauce is so quick and easy to do. You can even make the peanut butter in the same machine! No nasties, full control and confident cooking. Get the recipe here or watch how easy peanut butter is to make here on our Youtube channel. 

This satay sauce has been designed to be used two ways. Out of one base mix, we can make two quite different sauces. We’ll use one half as a light and fresh salad dressing and with the other half we’ll cook it down and serve it with some barbecued Indonesian satay chicken skewers. Of course, you can adjust the base mix quantities to suit your needs.

WATCH HOW BOTH SATAY SAUCES ARE MADE HERE


INGREDIENTS

1 cup smooth peanut butter 
400ml coconut milk
2 tablespoon light soy sauce 
2 shallots, peeled 
4 cloves garlic, peeled
4 birdseye chillies, ends removed 
2 tablespoon coconut sugar (or palm sugar)
1 lime, juice to taste 
½ cup extra crushed peanuts 

METHOD

1.   Starting with the wet ingredients, put everything into the blender jug except for the crushed peanuts.
2.   Blend on smoothie mode for 20 seconds or until completely smooth. Adjust seasoning and blend for a further 5 seconds if necessary.

 Pour half of the mix into a bowl. Keep one half to serve with a fresh salad. 

4.   For the dipping sauce, heat a tablespoon of coconut oil in a small saucepan over medium heat.

 Pour the remaining half of the satay sauce into the pan and bring to a simmer, stirring occasionally. Reduce by ⅓ or until thick and fragrant.
6.   Remove from the heat and stir through the crushed peanuts.
7.   Serve as a dipping sauce with barbecued chicken skewers or fresh veges.
