Making it is as simple as combining feta, yogurt, lemon zest and garlic in the Vibe Blender and blitzing until lusciously smooth. Whipped feta with crispy chickpeas can be made up to 5 days in advance. Store the components separately in air-tight containers; put whipped feta in the fridge and crispy chickpeas in the pantry.
Crispy Chickpeas
1 x 400g can chickpeas, rinsed and drained
2 teaspoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon cumin powder
½ - 1 teaspoon chilli powder
½ teaspoon good quality salt
Whipped Feta
300g Greek feta, chopped into small cubes
1 cup homemade yogurt
1 clove garlic finely chopped
Zest of 1 lemon
Pinch of salt (optional)
Olive oil to serve
Crispy Chickpeas
1. Preheat oven to 180°C / 375°F.
2. Line a tray with baking paper.
3. Rinse and drain the chickpeas, shaking off as much water as possible.
4. Spread the chickpeas out on a clean kitchen towel. Use your hands to gently pat and roll dry the chickpeas. Some of the skins should start coming off. You can opt to peel the chickpeas or simply remove the skins that come off easily.
5. Place the dry chickpeas into a bowl. Add the oil and toss to coat. Add the spices and salt then mix until thoroughly coated.
6. Pour on the chickpeas onto the baking tray and spread into a single layer.
7. Bake for about 45 to 60 minutes until crispy and dry, shaking the pan halfway. 8. The exact bake time depends on the brand of chickpeas you are using and your oven. Keep a close watch and taste test at 45 mins.
9. Let cool for at least 15 minutes before topping on the whipped feta.
Whipped Feta Dip
10. Combine the yogurt, feta, garlic and lemon in the Vibe Blender jug. Choose ‘smoothie’ mode and processor for 40 seconds or until smooth. You may need to stop and scrape down the sides of the jug.
11. Pour the whipped feta into a serving dish and top with the crispy chickpeas.
12. Drizzle with olive oil and serve.
